4 cups diced rhubarb
1/4 cup brown sugar
1/4 tsp cinnamon
1/2 tsp vanilla extract
Greek yogurt to serve with.

Rhubarb-Vanilla Compote Directions

  1. Combine rhubarb, sugar and cinnamon in a saucepan.
    Bring to a simmer over a medium-high heat, reduce heat to a genle simmer and cook until the
    rhubarb begins to break down, about 5 minutes.
    Remove from heat and stir in vanilla.
    Serve with Greek yogurt.
