Asian Crusted Trout

Ingredients
4 Trout Fillets
Marinade:
1 tablespoon of honey
60ml soy sauce
1 clove of garlic crushed
1 inch root ginger, crushed
Crust:
75g/3oz cashew nuts roughly chopped
Grated zest and juice of ½ lime
1 tablespoon coriander chopped
½ red chili chopped
To serve:
Mixed salad leaves
Lime wedge
Asian Crusted Trout Directions
- 1. Mix together all the ingredients for the marinade in a large bowl. Add the trout fillets and
mix well to ensure the marinade coats the fish. Leave for between 30 minutes to 3 hours.
2. Mix the crust ingredients together in a bowl.
3. Preheat the oven to 180 o C/350 o F/gas mark 4.
4. Line a baking tray with some parchment paper. Place the trout fillets on top and spoon over
any remaining marinade. Dive the crust equally and bake in a preheated oven for 15-18
minutes.
5. The fish can be served warm or cold with some mixed salad leaves.
