Flourless double chocolate chip muffins

Ingredients

½ cup almond or hazlenut butter
1 ripe medium / large banana
1 egg
¼ cup honey
¼ cup cocoa powder
2 tablespoons ground flaxseed or oat bran
½ teaspoon baking soda
¼ cup / 50g 70% dark chocolate, broken into small pieces / chocolate chips

Flourless double chocolate chip muffins Directions

  1. 1. Preheat the oven to 190 oC / 375 o C
    2. Prepare a muffin pan by spraying 9 caviites with cooking spray
    3. Add all the ingredients except for the chocolate pices / chips, to a blender and blend on high
    until mixture is smooth and creamy, then stir in the chocolate pices by hand
    4. Pour mixture into prepared muffin pan, filling each cavitiy until about ¼ full
    5. Bake for 10 – 12 mintues, util the tops of muffins are set and a toothpick inserted into the
    middle comes out clean
    6. Allow muffins to cool in pan for 10 minutes before removing
    7. Store in an airtight container for up to a week
