Grain free Peanut butter chocolate chip cookie dough bites

1 ¼ cups canned chickpeas, well rinsed and patted dry with a paper towel
2 teaspoons vanilla extract
½ cup and 2 tablespoons (165g) natural peanut butter
¼ cup / 80g honey
1 teaspoon baking powder
½ cup / 90g 70% dark chocolate, broken up into small chocolate chip sized pieces

Grain free Peanut butter chocolate chip cookie dough bites Directions

  1. 1. Preheat your oven to 175 oC / 350 oF.
    2. Combine all the ingredients, except for the chocolate chips / pieces, in a food processor and
    mix until smooth.
    3. Scrape the sizes of the food processor and process again until fully combined
    4. Stir in the chocolate chips / pieces
    5. With wet hands, form into 14 small cookie shaped pieces
    6. Place onto a parchement paper and press down slightly on the cookies to flatten
    7. Bake for about 10minutes. They will remain soft when cooled.
    8. Store in an airtight container at room temperature, or in the fridge for up to 1 week.
