Quinoa Brownies

2/3 cup raw quinoa
1 1/3 cup water
1/3 cup low fat milk
3 large eggs
1 teaspoon vanilla extract
¾ cup unsalted butter, melted and cooled
1 ½ cup light brown sugar
1 cup cocoa powder
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt

Quinoa Brownies Directions

  1. 1. Make the quinoa according the package directions and allow to cool
    2. Preheat the oven to 175 oC / 350 oF.
    3. Lightly mist an 8 x 8 or 9 x 9 baking dish or line the bottom of the pan with parchement
    4. In a blender or food processor, combine the milk, eggs and vanilla
    5. Add the cooked quinoa and butter and continue to blend until smooth
    6. In a medium bowl, whisk together the sugar, cocoa, baking powder, baking soda and salt
    7. add the blender contents to the dry ingredients and mix well
    8. Pour the mixture into baking dish and bake on the centre rack of the oven for 40 minutes or
    until a toothpick inserted into the centre comes out clean
    9. Remove the brownies from the oven and cool completely in the pan before serving
    10. Store in a sealed container in the fridge for up to a week or freeze up to 1 month.
