1 cup skimmed milk
½ cup plus 1 tablespoon couscous
2 ½ tablespoons brown sugar
¼ cup dark raisins
¼ teaspoon ground cinnamon
1/3 cup low fat vanilla yogurt

Viceless Riceless Pudding Directions

  1. 1. Heat the skimmed milk in a small saucepan until just boiling.
    2. Stir couscous, brown sugar, raisins and cinnamon into the milk
    3. Remove the mixture from the heat and cover with a tight fitting lid
    4. Allow to sit until milk is absorbed (about 10 minutes)
    5. Stir in the yogurt and serve warm.
    6. Sprinkle the top lightly with more cinnamon if desired.
