Ingredients

200g / 7 oz. plain flour
3 teaspoons baking powder
1½ teaspoons ground cinnamon
Pinch ground nutmeg
50g / 2 oz. ground almonds
50g / 2 oz. sugar
2 – 3 bananas
2 eggs
2 tablespoons vegetable oil, plus extra for greasing
125ml / 4 fl oz milk
3 tablespoons honey

Banana Muffins Directions

  1. 1. Pre-heat the oven to 190°C / 375°F / Gas Mark 5.
    2. Mix the flour, baking powder, and cinnamon in a bowl. Stir in the nutmeg, almonds and
    sugar.
    3. Mash the banana and mix in the eggs, oil, milk and honey to make a sloppy paste, then add
    to the dry ingredients and mix well.
    4. Spoon into 10 paper cases or greased cups in a muffin tray and bake in the oven for 20 – 25
    minutes until well risen
