Pork, chickpea and sweet potato stew

1 tablespoon of olive oil
4 lean loin pork chops (170g each) cut into strips
2 large onions, peeled and chopped
2 cloves of garlic, peeled and crushed or finely chopped
2 teaspoons of paprika
2 teaspoons of rosemary
2 teaspoons of thyme
1 bay leaf
120g of chickpeas, drained
2 medium sweet potatoes, peeled and cubed
2 tins of chopped tomatoes (400g each)

Pork, chickpea and sweet potato stew Directions

  1. 1. Heat the oil in a not stick pan and when hot, brown the pork. Remove the pork from the pan
    and set aside.
    2. Next add the onion and all the herbs and spices and cook for 5 minutes before stirring in the
    remainder of the ingredients, including the pork.
    3. Cover the stew, turn the heat down to its lowest and simmer until tender.
