Chicken fillet burger and sweet potato wedges

1 small sweet potato, washed and cut into wedges (130g / 4½oz.)
1½ teaspoons of olive oil
1 teaspoon of paprika
1 small chicken breast (100g / 3½oz.)
3 tablespoons of frozen sweetcorn, defrosted in the microwave
1 burger bun (50g / 2oz.)
1 teaspoon of tomato based relish
4 small leaves of lettuce

Chicken fillet burger and sweet potato wedges Directions

  1. For the sweet potato wedges
    1. Preheat the oven to 200 o C / Fan 180 o C/ Gas mark 6.
    2. Place the sweet potatoes in a bowl and toss them in the oil and paprika.
    3. Transfer them to a baking tray and place in the oven for 15-20 minutes until lightly browned.

    For the chicken

    1. Preheat the grill to a medium heat and grill the chicken for 5-7 minutes on both sides until
    cooked through.

    For the rest

    1. Boil the corn in a little water for 10 minutes until soft.
    2. Spread the relish onto the burger bun and top with the cooked chicken breast and lettuce
    3. Serve the burger with the sweet potato wedges and corn.
