Basic tomato sauce (below)
4-5 breasts of Chicken (Diced)
2tsp chopped capers.
1table spoon green olives (optional)

Tomato Base Sauce
1 large onion
Celery 1-2 sticks
Carrot 1-2
Garlic 2-3 cloves
2 tins tomatoes
1 tablespoon tomato puree
I tsp sugar
Olive oil for cooking

Italian Chicken Directions

  1. 1. Make the basic tomato sauce above.
    2. Add chopped capers to the sauce and olives
    3. Add the diced chicken breasts to the sauce and poach for 20-30 minutes.
    4. Add the chopped basil to taste.

    Sauté one large onion and about 3 cloves of garlic in olive oil on a medium heat for about 10
    minutes. along with the vegetables, grate carrot (use potato peeler or grater to grate carrot into
    sauce, dice the Celery and add 2 tins of chopped tomatoes (use the whole plum tomatoes they are
    better quality) pinch of sugar table spoon of tomato puree and pinch of pepper and plenty of salt for
    taste and a bay leave / or basil and leave to simmer on a really low heat for about 2 ½ h ours.  If you
    find the mixture is too watery let it cook for a longer time if it is too thick just had some water.
