Chicken, chive and red pepper frittata

1 tbsp olive oil
15 small new potatoes, cooked and diced
4 spring onions, chopped
1 red pepper, diced
1 chicken breast, cooked and diced
3-4 tbsp fresh/frozen peas
6 eggs, lightly beaten
120g low fat cream cheese

Chicken, chive and red pepper frittata Directions

  1. Heat the oil in a small frying pan.
    Toss in the potatoes, vegetables and chicken.
    Fry for 3-4 minutes, until warmed through.
    Pour in the eggs.
    Cook for a few minutes until the base is set and lightly browned.
    Preheat the grill to medium.
    Dot the cheese across the top of the frittata and pop under the grill until golden brown.
