Sardines and Sundried Tomatoes

1 tbsp olive oil
1/3 cup onion, finely diced
3 cloves garlic, sliced
1 tin sardines (in sunflower oil)
1 tbsp capers
8 sun-dried tomatoes
1/4 cup parsley
1/4 cup whole wheat or brown rice spaghetti, cooked

Sardines and Sundried Tomatoes Directions

  1. 1. Begin by cooking the pasta according to the instructions on the box. Once cooked, drain and
    cool with a little running water. Drain again really well.
    2. Next, preheat a large pot on medium heat. Add the olive oil, the onion, and garlic. Sauté,
    stirring regularly until lightly browned.
    3. Add the sardines, capers, sun-dried tomatoes and parsley. Stir well.
    4. Finally, add the pasta. Stir very well and serve immediately. Store leftovers in fridge.
